Ingredients:
1 block of hard tofu, 200g minced chicken, 1 Goya, 1 tbs vegetable oil, salt, pepper
(A) 2/3 tbs cooking sake, 2/3 tbs sugar, 1/3 tbs soy sauce,
(B) 1 tbs cooking sake, 1/2 tbs soy sauce
Directions
1. Place (A) and the chicken mince in a saucepan. Heat whilst stirring until there is no liquid left, then move contents to a bowel.
2. Wrap the tofu in a paper towel, place it in a microwave safe container and then microwave for 2 minuites (500W).
3. Cut the Goya in half lengthwise. Using a spoon scrape out the contents and then cut into thin "U" shaped pieces.
4. Add the vegetable oil to the saucepan. Next add the Goya, salt and pepper and fry for a short while. Add the contents of (A) and mix well.
5. Break the tofu into small pieces by hand and add to the saucepan. Add (B) to season and heat until warm.
Note: Goya is a Japanese variety of bitter-melon. If you are unable to obtain a Goya, any variety of bitter melon will do.
